As I understand, Samsung Galaxy Watch 6 can be used without a phone and also is able to send data via WIFI. Is it possible to stream data from the sensors (obtained by Wear OS Health services) to a local network server via WIFI, in order to process the data with a Python or C++ program?

For Wear OS, you can use the Data Link Layer to transfer data.
Regarding, Python or C++, these languages will not support Galaxy watches running wear OS.
Only Java/Kotlin can be used.
