Nice out of the box idea. You would have to create two watch faces, one for each part of day and set the android app to switch them. I guess otherwise you would have to make two designs within one face anyway, so that is not so hard.
On platforms where it can be incorporated in one face, usually sunrise and sunset times are provided by third party weather info service, depending on your location.
