Some watch faces like those from Samsung allow the user to long press and change the font of the main time. I’m wondering how to achieve that in WFS, is that possible?

The only Samsung watches that I know that may let you change the Fonts are RTOS watches.
I don’t think there is any way to do this with Watch Face Studio.
