1 - What settings do I need to have to use SAP with the watch connected remotely to the phone?
2 - How do I launch the app on the phone when I open the app on the watch?

  2. The solution to this problem would probably be Deep Link. Please check the documentation.

1 - “Connected remotely” is the term that shows up on the watch when the user is connected to his smartphone through Wi-Fi/ LTE.

2 - What documentation? There are “many” spread all over the internet.
