We have had our app waiting for approval in beta, however I don’t see any SLAs regarding how long the approval process takes? Others seem to have this issue too, but still nothing concrete like other platforms (e.g., Roku). Does anyone have an estimate on when we can expect an approval decision?

There is no other option except to contact support through the Seller Portal to get an update.
